Artichoke Leaves

1 Large artichoke
2 Lemons
Smoked Mushroom Garum (optional)
Olive Oil or Cep Oil (optional)
Vegan XO Sauce
Salt to taste
Pepper to taste



1. Place the whole artichoke in a pot with water to cover, salt and 1 lemon cut into slices. Simmer until tender, time will vary depending on the size of the artichoke.

2. When tender, remove the artichoke from the water and let it cool down for a few minutes. When cool, start removing the leaves, discarding the outermost ones until you get to the ones with white artichoke flesh on them. Spread these leaves out on a plate and dress with a splash of lemon juice, salt, pepper, olive oil or Cep Oil, Smoked Mushroom Garum (if you have it) and finish it off with a few spoons of Vegan XO Sauce. Or, simply serve with Vegan XO Sauce on the side as a dip for the artichoke leaves.
