Artichoke Leaves
Serves 2
Ingredients
1 Large artichoke
2 Lemons
Mushroom Garum (optional)
Olive Oil or Cep Oil (optional)
Vegan XO Sauce
Salt to taste
Pepper to taste
Method
- Place the whole artichoke in a pot with water to cover, salt and 1 lemon cut into slices. Simmer until tender, time will vary depending on the size of the artichoke.
- When tender, remove the artichoke from the water and let it cool down for a few minutes. When cool, start removing the leaves, discarding the outermost ones until you get to the ones with white artichoke flesh on them. Spread these leaves out on a plate and dress with a splash of lemon juice, salt, pepper, olive oil or Cep Oil, Smoked Mushroom Garum (if you have it) and finish it off with a few spoons of Vegan XO Sauce. Or, simply serve with Vegan XO Sauce on the side as a dip for the artichoke leaves.
