Noodle Salad
Serves 2
Ingredients

100g fresh green peas or soybeans 
100g water 
300g rice noodles 
1 spoonful Pumpkin See Praline 
cilantro 
mint 
chives 
lime 
salt 
1 jalapeño or chile 
Sesame seeds 

Method
  • Cook the rice noodles in a large pot of boiling water.  
  • Drain, then place in a bowl with cold water to stop the cooking process. 
  • Prepare the dressing by blending the fresh beans with water and a pinch of salt using a stick blender until smooth. Add the Pumpkin Seed Praline and adjust seasoning to taste. 
  • Mix the sauce with the noodles, allow them to soak, and add some lime juice. 
  • Chop the herbs, slice the chile, and cut the lime into quarters. 
  • Plate the noodles, top with the herbs, chiles, an sesame seeds and serve with extra lime wedges.
