What is a garum? +
Garums were originally fermented fish sauces made all around the Mediterranean basin. The tradition dates back thousands of years, and we’re extremely proud to carry the tradition forward. Garums can be used as a versatile seasoning for all types of food, but we find them to work best with vegetables. If you’re looking to incorporate more veggies into your diet but have been missing deep flavor that meat and seafood typically provide, then look no further. We hope our garums will spark culinary creativity and deeper exploration towards a plant-forward diet.
What is wild rose vinegar? +

Our wild rose vinegar is a radical take on a classic seasoning vinegar. We forage the petals of rosa rugosa − an invasive species originally native to Japan − from the Danish coast and blend them to create a vinegar with a delicate, powerful flavor redolent of the scent of the flower itself.

What is garum made from? And how is it made? +
Where traditional recipes rely on the naturally occurring enzymes in fish intestines to break down the fish into an umami-rich sauce, we use koji as a replacement to do the same. By using koji, we can then experiment with a wider range of high-protein and also plant-based ingredients found in nature, using the same process but with different ingredients to extract delicious flavors. The process of begins with pressing the raw ingredient, mixing that in salt and water, fermenting for 6-10 weeks depending on the ingredient, then straining for the final product: a powerful, savory liquid seasoning.
What is Project 001? +

Project 001 is the beginning of a series of special pantry products. After 20 years of experimentation, our lab is brimming with ideas and we want to share some of the best of what we’ve developed. We’re starting with a garum, but it’s the first of more to come.

Our first garum (Smoked Mushroom Garum) is lightly smoked, plant-based, soy- and gluten-free, and packed with flavor. We crush organic mushrooms with salt and rice koji before cold smoking and bottling this special brew. Umami rich and not too salty.

Where are your products made? +

Our products are made in Copenhagen, with love from Noma chefs and the fermentation lab.

Why fermentation? +

Our story with fermentation is a story of accidents.

Fermentation is at the heart of everything we do at Restaurant Noma. From our very first bunker at our old restaurant in 2004 to our fully dedicated Noma Fermentation Lab team, we’ve trialed thousands of recipes from with kombuchas and koji to vinegars and tamaris. Once accidental success led to another. Studying the science and history of fermentation, learning to do it ourselves, adapting it to local ingredients, and cooking with the results changed everything at Noma. We are sharing the magic and power of fermentation with the world, and hope it sparks some inspiration in your home cooking.

Do your products require refrigeration? How long do they last? +
Our garums do not require refrigeration before they are opened as they are shelf-stable products. However, be sure to refrigerate them once you’ve opened it and use within 3 months. We recommend using our garums within one year of bottling (each bottle's date of production is printed on the cap). With our wild rose vinegar, please refrigerate after opening and use within 6 monts.
Soy free? +

Yes

Peanuts? And other allergens? +

No peanuts or traces of tree nuts. Our garums are also gluten-free.

Sustainability

How do you source your ingredients? +
We source some ingredients from local, ethical, and organic farmers and forage others. Stepping into nature is how we found our inspiration 20 years ago; it drives everything we do. For Noma Projects, this care and respect for nature is at the core of every decision we make.
Is the Noma Projects packaging sustainable? +

Our custom Noma Projects packaging is made of eco-friendly, recycled paper. We source envelopes and boxes from FSC-certified providers that are devoted to the protection of forests and woodlands.

Can I recycle your packaging? +

Yes, please do. Our products are bottled in glass jars which can be recycled or reused as a water bottle, vase, or as you wish. Our paper packaging is 100% recyclable – we choose not to coat or line our packaging with padding, as that impairs with their recyclability.

Other initiatives we care about +

Noma Projects is committed to returning to the land that has been our source of inspiration from day 1. We are aware that production and global shipping means we are contributing to waste, so we do everything we can to control and reduce our footprint. This means working with ethical partners and suppliers, sourcing locally and organically, where possible, and using seasonal ingredients that are good for the earth.

Ordering & Shipping

Where do you ship to? +
We currently ship to the EU, UK, US, Australia, Canada, Switzerland, Norway and Japan. Shipping rates have increased due to global fuel surcharges, however we’re working our hardest to try to lower shipping costs.
How much is shipping? +

Shipping costs will vary based on your location. Use the shipping calculator at checkout to see the shipping rates available to you. We’re working on lowering international shipping rates as we grow. We thank you for your patience.

When will I receive my order? +

All shipments will be sent from Denmark. Orders are processed within 2-5 business days.

Once your package leaves our fulfillment center, transit time will vary depending on your location and preferred shipping method selected at checkout. We’ll send you tracking information as soon as your order has shipped.

What carriers do you ship with? +

All orders to Denmark, Sweden, and Finland will be delivered by Bring. All orders to Switzerland will be delivered by PostNord. All other countries will be delivered by UPS.

What payment methods to you accept? +

We accept all major credit cards, debit cards, prepaid cards, MobilePay, and e-wallets

Why is my credit card not being accepted? +

Some international credit cards may not be processed through our payment terminal. We recommend checking out with Apple or Google Pay.

Product prices are shown in DKK (including Danish VAT). Use the currency converter pop up to view the prices in your currency.

For customers from the EU, VAT will be applied at checkout. For all other customers, your total will not include VAT or sales tax.

My package was lost/returned, can you help? +

Unfortunately, Noma Projects is not responsible for lost parcels, or delayed, unclaimed, or returned orders due to incorrect or undeliverable addresses entered by the customer. Email us at hello@nomaprojects.com, and we'll do our best to help.

Can I cancel/change my order? +

Unfortunately, we cannot make changes to processing orders, but if you email us your order number, we'll do our best to help you.

What are customs & import duties? +

Please be aware that customs and import duties may be applied to customers from the UK, Canada, Australia, and Japan. These fees are set by country tax and tariff agreements. Such charges will be due when the shipment reaches its destination and are the responsibility of the customer to pay upon pick up. Your courier will notify you on how to pay.

For any package that is not picked up, we unfortunately cannot refund the order or shipping.

Returns & Refunds

What is your return policy? +
Due to the perishable nature of food products, we cannot process returns or refunds for our packaged food items.
My order arrived damaged, what do I do? +

For any damaged or incorrect items, please email hello@nomaprojects.com within fourteen (14) days of receiving your product and we’ll find a solution.

When will my refund be processed? +

We do not process returns or refunds for garums, however customer satisfaction is our number one priority. If you're not happy with your purchase, email us at hello@nomaprojects.com within fourteen (14) days of your order. Include your order number and request in the email.

We will review requests on a case by case basis. If approved, refunds will take 7-10 working days to process from the time of receiving your request. Depending on your payment method, it may take 1-2 billing cycles to show in your accounts.

If we receive requests more than fourteen (14) days after your purchase, we unfortunately cannot provide you a refund. Read more about our refund policy here.
