Inspired by Japanese food culture, our Pumpkin Bushi is a plant-based take on katsuobushi, the umami-rich smoked fish condiment. This unique ingredient is crafted from Manjiro pumpkins, which are hot-smoked and dried for over a month to achieve a profile that is very smoky, heavily spiced, and subtly sweet. Grate the Bushi onto pasta, rice, or vegetables to instantly add an extra layer of savory depth to any dish.

About Pumpkin Bushi

Our endless admiration for Japan has inspired more than a few ingredients that have never existed. One of them is Pumpkin Bushi. It's a plant-based play on on katsuobushi, the time-honoured, umami-rich condiment made of smoked-and-dried fish shavings. We developed Pumpkin Bushi with a fourth-generation katsuobushi craftsman: Yusuke Sezaki-san of the famed Kagoshima bonito shop Kaneshichi Shoten. He, our Creative Director Thomas Frebel, and the noma team set about creating a different, yet equally compelling katsuobushi. We've been refining the recipe ever since.
