Noma Projects’ first-ever sweet release is our spin on the nutty spreads people around the world adore.

It was developed during 2022’s Game and Forest season, when we were serving a memorable dessert based on chestnuts that featured pumpkin seed oil. Could we make anything with the pumpkin seed sediment? A praline, maybe? Sweet and classic. But also more complex.

Pine and parsley oils add a slightly herbal dimension that balances out the more decadent notes, making it possible to eat as much of this Pumpkin Seed Praline as your heart desires.

Ingredients

Pumpkin seeds (55%), muscovado sugar, pine oil (rapeseed oil*, pine*), parsley oil (rapeseed oil*, parsley), salt. Organic ingredients are marked with (*).

Refrigerate after opening and consume within 6 months. May contain traces of nuts.

*The rapeseed oil we use is an EU-certified organic rapeseed oil. By EU organic regulations, that means it is processed via physical extraction, without the use of any chemicals, cannot be fortified, and does not contain any GMOs. We choose this neutral oil to make way for the flavors of the other ingredients to shine through.
