These fudgy dark chocolate cookies are crispy on the outside, molten in the middle, and loaded with chocolate chunks and walnuts. A drizzle of Pumpkin Seed Praline adds a nutty finish that will have you reaching for another... and then another.
Ingredients
- 158 g 100% dark chocolate
- 198 g baking chocolate
- 79 g butter
- 5 - 6 eggs (≈279 g)
- 475 g sugar
- 5 g vanilla paste
- 2.5 g salt
- 6.8 g baking powder
- 79 g pastry flour
- 554 g chocolate chunks
- 158 g walnuts
Method
- Preheat oven to 160º C.
- Melt the 100% chocolate, baking chocolate, and butter together on top of a bain marie.
- In a mixer add the eggs, sugar and vanilla paste. Whip until ribbon consistency is achieved.
- Combine the melted ingredients into the mixer, and combine.
- Add flour, salt, baking powder, mix until incorporated. Add chocolate chips and walnuts, and fold through.
- Scoop into a baking tray and bake at 160º C for 20 minutes.
- Once cooled, transfer to a serving plate and drizzle with Pumpkin Praline.
