Ingredients
- 1 Hokkaido pumpkin
- 200 g potatoes
- 50 g brown butter
- 1 tbsp chives, minced
- 2 tbsp pumpkin seeds, toasted
- 2 tbsp Corn Yuzu Hot Sauce
Method
- Peel and dice the pumpkin and potatoes. Place into a pot, cover with cold water and bring to a boil. Simmer until they are cooked through.
- In a food processor, blend the potato and pumpkin with the brown butter and Corn Yuzu Hot Sauce.
- Transfer to a serving bowl, and top with toasted pumpkin seeds and minced chives.
