Elderflower Peaso Banana Bread

Noma chef Nurperi Yigit has been making versions of this incredibly comforting banana bread for decades, ever since she managed to convince her childhood friend’s mom to give her the recipe. Her latest riff on this cherished dessert features Elderflower Peaso in the batter, which adds layers of flavor and savory notes to balance the sweetness.

Ingredients
  • 3 very ripe medium bananas, mashed  
  • 250 g brown sugar 
  • 2 medium eggs 
  • 3 tbsp milk 
  • 3 tbsp Elderflower Peaso 
  • 115 g neutral oil  
  • 1 tsp vanilla extract  
  • 240 g all-purpose flour  
  • ½ tsp salt 
  • ½ tsp baking soda 
  • ½ tsp baking powder 
  • 75 g walnuts or pecans, chopped
Method
  • In a large bowl, mash the bananas. Add both sugars and the eggs, and whisk. Then add the milk, brown butter, Elderflower Peaso, and vanilla extract. Continue whisking until everything is well combined 
  • Add all of your dry ingredients to the bowl and mix well. Lastly, fold through most of your chopped nuts.  
  • Transfer to a buttered, greaseproof loaf tin, and add more chopped nuts on top. 
  • Bake at 170° C for arounnd 45 -50 minutes, or until a toothpick comes out clean from the center of the loaf.  
  • Let cool for at least 1 hour before slicing.
