Ingredients
2 eggs
1 tbsp cooking olive oil
10 g (2/3 tbsp) butter
Corn Yuzu Hot Sauce
Method
- Place a pan over high heat until it is very hot; this is key to getting the egg crispy. Add olive oil, crack in the egg, and cook until the edges of the whites start to turn golden brown, about 1 minute. Add the butter. With a spoon, baste the yolk in the hot melted butter until there is no translucent layer on the surface of the egg.
- Transfer to a plate and season with salt, freshly cracked black pepper, and a good amount of Corn Yuzu Hot Sauce. Serve with well-buttered bread.
