Ingredients

200g Mussels
200g Clams
200ml White wine
1 Fennel with top
A few stems of Lemon thyme
2 Onions with top
2 Cloves of garlic
Vegan XO Sauce
Olive oil

Method
  • Remove the onion and fennel tops and place to the side.ย Sliceย theย fennel, red pepper, garlicย clovesย and onionsย thinly.ย Heatย 2ย tablespoonsย of olive oilย in a pot and fryย theย slicedย red pepper, fennel,ย onionย and garlic for 1-2 minutes.ย Addย 200mlย of white wine,ย theย lemon thyme and the musselsย and clamsย toย the pot.ย Cover pot with a lidย andย steam for a few minutesย untilย theย mussels and clamsย openย (discard any thatย havenโ€™tย opened).ย 
  • Chopย theย fennel and onion tops and sprinkle themย overย theย steamed clams and musselsย along withย aย few largeย spoonfulsย ofย Vegan XOย Sauce. Serve straight from the pot orย pour into aย large, wideย bowl.
