Vegan XO Sauce
Ingredients
1 Large artichoke
1 Lemon
2 tsp Extra Virgin olive oil
1 Lime
A few stems of Flat leaf parsley
Vegan XO Sauce
Salt to taste
Pepper to taste
Method
- Remove all of the leaves and the stem from the artichoke, leaving only the heart. Place the artichoke heart in a pot and fill with water to cover. Add salt and the juice of one lemon. Crush the parsley stems and add them to the pot.ย
- Bring the water to a simmer and slowly poach the artichoke heart for 10 - 15 mins until tender.ย
- Sliceย theย artichoke heart thinly,ย thenย press on the topย ofย theย slices toย create smallย fan-shaped pieces.ย Grill the slices together on theย barbecue,ย brushingย with olive oil while grilling.ย
- Onceย grilled,ย moveย theย fansย of grilled artichoke heart onto a plate, addย salt, pepper, choppedย parsley,ย a splash ofย lime juice and aย spoonย of Vegan XOย Sauce.
