Grilled Green Tomatoes and Goat Cheese

4 Green Tomatoes
150g Creamy goat chesse
1 Lemon
2 tsp Cooking oil
Extra Virgin Olive oil to taste
A few fresh Oregano leaves
10 Fresh Raspberries
Vegan XO Sauce
Salt to taste
Pepper to taste



1. Whip the creamy goat cheese with some freshly ground pepper, salt, and a splash of lemon juice to make the cheese softer and to brighten the taste.

2. Slice the green tomatoes into thick rounds and brush a thin coat of oil to both sides of the slices. Grill the tomato slices at a high heat on the barbecue until charred on both sides. 

3. Grab a deep big plate of your liking and spread the creamy goat cheese on the bottom of the plate to create a bed for your grilled tomatoes. Layer the grilled green tomato slices on top. Dress with dots of Vegan XO Sauce, olive oil, salt and pepper, and garnish with raspberries and fresh oregano.
