Green Summer Gazpacho

Serves 2-4 | 15 mins


320 g Green peppers
280 g Cucumber
80 g Lime juice
280 g Kohlrabi
10 g Lovage
10 g Parsley
10 g Chives
10 g Coriander
40 g Olive oil
Zest from the limes
Vegan XO Sauce to finish



1. Clean and dice the green peppers, cucumber and kohlrabi. Clean and chop the herbs coarsely. Blend the herbs, diced vegetables, and olive oil together in a blender. 

2. Grate the zest of 1-2 limes and add to the blender, together with 80g of freshly pressed lime juice.

3. Blend again until it reaches desired smooth consistency. Adjust to taste with salt and possibly extra lime zest. Serve cold in little bowls and drizzle with Vegan XO Sauce to finish.
