Ingredients

320 g Green peppers
280 gย Cucumber
80 gย Lime juice
280 g Kohlrabi
10 g Lovage
10 g Parsley
10 gย Chives
10 g Coriander
40 g Olive oil
Salt
Zest from the limes
Vegan XO Sauceย to finish

Method
  • Clean and dice the green peppers,ย cucumberย and kohlrabi. Clean and chop the herbs coarsely. Blend the herbs, diced vegetables, and olive oil together in a blender.ย 
  • Grate the zest of 1-2 limes and add to the blender, together with 80g of freshly pressed lime juice.
  • Blend again until it reaches the desired smooth consistency. Adjustย toย taste with salt andย possibly extraย lime zest. Serve cold in little bowls and drizzle with Vegan XO Sauce to finish.
