Bitter Greens and Truffle Salad

Ingredients
- 200g assorted bitter greens, roughly torn
- 60g Truffle à la Crème
- Sherry vinegar
- 20g hazelnuts, toasted and chopped
- Salt, to taste
- Black pepper, to taste
- Chives, minced
- Tarragon, chopped
- Parmiggiano reggiano, to taste
Method
- Ensure that the greens are free of any dirt and are adequately dry, and place in a large bowl.
- Add the Truffle à la Crème and vinegar to the bowl and toss to coat. Taste the salad and add as much vinegar as necessary to balance the bitterness of the greens.
- Add the nuts and the herbs, and toss to disperse. Season with salt and pepper.
- Transfer the salad to a plate in a tall pile. Shave the cheese over the salad. Serve immediately.
