Bitter Greens and Truffle Salad
Ingredients
  • 200g assorted bitter greens, roughly torn
  • 60g Truffle à la Crème
  • Sherry vinegar
  • 20g hazelnuts, toasted and chopped
  • Salt, to taste
  • Black pepper, to taste
  • Chives, minced
  • Tarragon, chopped
  • Parmiggiano reggiano, to taste
Method
  1. Ensure that the greens are free of any dirt and are adequately dry, and place in a large bowl.
  2. Add the Truffle à la Crème and vinegar to the bowl and toss to coat. Taste the salad and add as much vinegar as necessary to balance the bitterness of the greens.
  3. Add the nuts and the herbs, and toss to disperse. Season with salt and pepper.
  4. Transfer the salad to a plate in a tall pile. Shave the cheese over the salad. Serve immediately.
