Chef Mega taught us how to make a flavorful Mie Goreng from whatever is left in your fridge. She added a splash of Pepper RDX to add a deep savory note with a touch of sweetness.
Ingredients
- 200g fresh egg noodles, or dried wheat noodlesย
- 100g Pepper RDXย
- 2 tbsp neutral oilย
- 2 cloves garlic, finely choppedย
- 2 spring onions, slicedย
- 1 small shallot, thinly slicedย
- 1 red chili, finely sliced, optionalย
- 1 eggย
- 2 tbsp sweet soy sauce / kecap manisย
- 100g Bean sproutsย
- 100g Spinachย
Method
- Boil the noodles until just tender, but not soft. Drain thoroughly and set aside.ย
- Heat the oil in a wok or wide pan over medium-high heat.ย
- Add the garlic, shallot, spring onions, and chili, ifย using. Stir-fry until fragrant and lightly softened.ย
- Add the light soy sauce, kecap manis, Pepper RDX, and white pepper. Stir toย combineย into a glossy sauce.ย
- Add the drained noodles and toss until evenly coated.ย
- Add in the Pepper RDX,ย mixingย thoroughly to combine.ย ย
- Add the bean sprouts and toss briefly, keeping them fresh and crisp.ย ย
