This new version of a noma classic has been aged in whiskey barrels for over a year, which creates a captivating smokiness to round out the acidity of the vinegar and bring the pumpkin’s sweeter notes to heel. It also features pumpkin bushi—a vegan spin on Japanese katsuobushi that provides another layer of smoke and depth.

Ingredients

Apple cider vinegar* 57%, butternut squash juice* 38%, birch syrup, smoked manjiro pumpkin 2%. *Organic.

95% of the agricultural ingredients are organic

Unpasteurized. Pumpkin sediment will settle at the bottom.
Shake before use: Refrigerate after opening and use within 6 months.

Use our Aged Pumpkin Vinegar to enhance warm salads and roasted vegetables. Fold it into a nutty fall pesto, add a few drops to highballs and mezcalitas during happy hour, or spoon some onto roasted fish just before serving... and remember to shake it well every time it’s put to use. 

Deep, complex, and subtly sweet, this noma classic was born when we set out to make use of all the beautiful squash leftover from a serving of pumpkin, beechnuts, caviar, and koji sauce.
