About Wild Rose Balsamic (Barrel Aged)

Wild beach roses are one of noma's most beloved ingredients. Because their season is incredibly short, the team has found ways to stretch their flavor year-round in everything from pickles, misos, and kombuchas to our now-classic Wild Rose Vinegar. 

That Wild Rose Vinegar is the starting point for this limited-edition recipe: wild beach roses are foraged by hand and infused in incredibly high concentration, capturing the essence of the petals. 

For six months, we age the Wild Rose Vinegar in Solera casks sourced from Acetaia San Giacomo, the historic producer from Emilia-Romagna. According to our friends in Modena, these barrels had been in use for at least a decade, absorbing flavor, before we got our hands on them.

After the barrel-age is complete, we reduce the liquid to a luxuriously syrupy consistency. It takes on the color of a dark honey…and it tastes incredible, with the caramelized notes at the forefront and an undertow of acidity that keeps everything in balance.
